3 Delicious Easter Brunch Recipes

I am a big holiday fan. Ever since I was little, my mom has always made a big deal about just about every holiday. Another favorite of mine is brunch. Eating a mix of breakfast and lunch food is ideal. Especially after a night of drinking, but that’s for a different day. So grab your aprons and chef’s hats, and have fun!

Here are a few delicious Easter brunch recipes for the whole family to enjoy:

Banana French Toast

One of my favorite brunch items is French Toast. I came across a banana French toast and became obsessed. It is easy to make, and my son loves to help. I can use a whole loaf of my favorite Trader Joe’s French Brioche Bread. We eat a few pieces, then freeze the rest for another day.

Ingredients
  

  • 2 ripe bananas
  • 2 eggs
  • 1/2 tsp Cinnamon
  • 1 tsp vanilla extract
  • 6 slices your favorite bread
  • 2 tbsp butter

Method
 

  1. Preheat griddle or frying pan over medium heat.
  2. Grease the surface with butter.
  3. Mash your bananas with a fork in a mixing bowl.
  4. Add eggs, cinnamon, and vanilla to mashed bananas and combine.
  5. Dip the slices one at a time in batter, dredging them on both sides, and place on a hot, greased griddle or pan.
  6. Cook for a few minutes on each side until golden brown.

Notes

Banana French Toast can be served with powdered sugar, syrup, or a caramel drizzle. My son’s favorite is almond butter.

Simple Scrambled Eggs

Ingredients
  

  • 1/2 tbsp butter
  • 2 eggs
  • 1 tbsp whole milk
  • 1/2 tsp salt

Method
 

  1. Melt butter in a small frying pan or skillet on medium heat.
  2. Crack eggs in a mixing bowl and add milk and salt.
  3. Whisk all together until fully combined. Add eggs to the hot skillet or pan and reduce the heat to low.
  4. Use a spatula to push the food gently from one end of the skillet or pan to another while cooking slowly.
  5. When the eggs are mostly cooked, add meat, veggies, and/or cheese if using.

Notes

I love to add cheddar cheese and chives to my eggs. Also, if whole milk isn’t your jam, try heavy cream or an alternative milk of your choice. My son's favorite tool in the kitchen is the whisk, so let the littles have at it.

Fruit Salad Yummy Yummy!

Who doesn’t love fruit? I know this is my son’s go-to. It was also something his class could make in school, and all the kids enjoyed it.

Ingredients
  

  • 1 cup strawberries
  • 1 mango prefer yellow mangos
  • 1/2 cup grapes
  • 2 kiwis
  • 2 bananas
  • 1 cup blueberries
  • 1/2 cup pineapple

Method
 

  1. Cut all fruit in half or into bite-size pieces. Especially grapes and blueberries, to prevent choking hazards.
  2. Mix all together in a mixing bowl and serve.

Notes

 Kids-safe knives are ideal for this activity. They get to practice their cutting skills and can contribute to the meal.
