Banana French Toast

One of my favorite brunch items is French Toast. I came across a banana French toast and became obsessed. It is easy to make, and my son loves to help. I can use a whole loaf of my favorite Trader Joe’s French Brioche Bread. We eat a few pieces, then freeze the rest for another day.

Ingredients
  

  • 2 ripe bananas
  • 2 eggs
  • 1/2 tsp Cinnamon
  • 1 tsp vanilla extract
  • 6 slices your favorite bread
  • 2 tbsp butter

Method
 

  1. Preheat griddle or frying pan over medium heat.
  2. Grease the surface with butter.
  3. Mash your bananas with a fork in a mixing bowl.
  4. Add eggs, cinnamon, and vanilla to mashed bananas and combine.
  5. Dip the slices one at a time in batter, dredging them on both sides, and place on a hot, greased griddle or pan.
  6. Cook for a few minutes on each side until golden brown.

Notes

Banana French Toast can be served with powdered sugar, syrup, or a caramel drizzle. My son’s favorite is almond butter.
